- 3 lbs Chicken (boneless skinless chicken thighs are best)
- 1 ½ lemon
- 1/3 cup of olive oil (until chicken glistens)
- 3 cloves of garlic
- Salt to taste (1 tablespoon)
- Pepper to taste
- 1/3 bunch of cilantro
You can chop the cilantro and marinade or add all ingredients in a blender for a smooth sauce. Marinade the chicken and refrigerate until you are ready to BBQ. If you don’t have time to prep add ½ to 1 more lemon to encourage a quick marinade.
