3 lbs Chicken (boneless skinless chicken thighs are best)
1 ½ lemon
1/3 cup of olive oil (until chicken glistens)
3 cloves of garlic
Salt to taste (1 tablespoon)
Pepper to taste
1/3 bunch of cilantro
You can chop the cilantro and marinade or add all ingredients in a blender for a smooth sauce. Marinade the chicken and refrigerate until you are ready to BBQ. If you don’t have time to prep add ½ to 1 more lemons to encourage fast marinade.
Cucumber Salad
3 English cucumbers (Persian cucumbers are great also)
1 package of grape tomatoes
½ red onion
½ bundle of Italian parsley
¼ cup olive oil
2 ½ lemons (3/4 cup of lemon juice)
Salt to taste
Pepper to taste
Dice up all the vegetables and herbs. Squeeze the lemons and then add the olive oil. Let the juices marinade. Than add salt and pepper to taste. A fresh salad that’s refreshingly good.
