Cilantro Chicken

  • 3 lbs Chicken (boneless skinless chicken thighs are best)
  • 1 ½ lemon
  • 1/3 cup of olive oil (until chicken glistens)
  • 3 cloves of garlic
  • Salt to taste (1 tablespoon)
  • Pepper to taste
  • 1/3 bunch of cilantro

    You can chop the cilantro and marinade or add all ingredients in a blender for a smooth sauce.  Marinade the chicken and refrigerate until you are ready to BBQ.  If you don’t have time to prep add ½ to 1 more lemons to encourage fast marinade.
  • Cucumber Salad

  • 3 English cucumbers (Persian cucumbers are great also)
  • 1 package of grape tomatoes
  • ½ red onion
  • ½ bundle of Italian parsley
  • ¼ cup olive oil
  • 2 ½ lemons (3/4 cup of lemon juice)
  • Salt to taste
  • Pepper to taste

  • Dice up all the vegetables and herbs.  Squeeze the lemons and then add the olive oil.  Let the juices marinade.  Than add salt and pepper to taste.  A fresh salad that’s refreshingly good.
